An easy Pasta Salad for 4th of July


This pasta salad recipe was given to me by a friend years ago and it has served me well. It is quick, easy and you can use whatever veggies you like.


Cook a 12 oz. bag or box of your favorite pasta according to package directions. I use Wacky Mac Veggie Spirals, which look like mini-rotini. After they're cooked, drain and run cold water over them to not only stop the cooking but cool them down.

Cut up any veggies you'd like to use in the salad. I use peppers, tomatoes, cucumbers, shallots, celery and throw in a few olives; the choice is up to you.

Once the pasta is cool to the touch, put it in a large bowl with the veggies, shake and pour an entire 8 oz. bottle of Wish-Bone Robusto Italian dressing and mix well. You can use any Italian dressing you like, I happen to like this one. Cool and chill for several hours. Mix occasionally while it chills.

On a slightly more serious but equally festive note, given America's serious troubles lately, we truly live in the land of the free and home of the brave. Wishing everyone a Happy 4th of July!!

I do not know about the taste, but the colours are fantastic!
