Cranberries


Yes, I know cranberries are so last October, November and December. But if you're like me, who freezes more than a few bags to use during the year, you might enjoy this recipe.

A friend, who is an excellent cook, shared this recipe with me years ago and I usually make it for Thanksgiving and Christmas. But the last time I made it, I realized it's one of those dishes that can be made any time, even if you don't you stockpile cranberries. It's called Hot Cranberry & Apple Dish and it can be used as a side dish or for dessert. It can be served warm or cold and if it's warmed, be sure to pair it with some vanilla ice cream because it's to die for! It's also healthy but don't tell the kids.

Hot Cranberry & Apple Dish

4 cups peeled and chopped apples (I use Golden Delicious)
1 cup raw cranberries*
1 15 ounce can whole berry cranberry sauce

Layer into a medium sized casserole dish in the above order.

Topping:

1/4 cup melted butter or margarine
1/3 cup brown sugar
1-1/3 cup oatmeal
1 cup chopped nuts (optional)

Mix topping ingredients and sprinkle on top of casserole dish. Bake at 325 degrees for 45 minutes.

Yes, it's that easy but stand back because this dish will disapper in a New York minute and your guests will request it whenever you're asked to "bring something."

*Don't have raw cranberries? They can be omitted.
